An accomplished Pastry chef, Thomas previously held positions of Pastry Chef and chocolatier at William Curley, London. Diving deep into 3 Michelin star kitchens. he is a graduate of the Escoffier & Ritz founded Westminster Kingsway Culinary School, London and under his guidance, our culinary team handcrafts all our confections using a producer led approach. Working with Indigenous owned farms, specialty providers and seasonal produce, they hand-select ingredients to highlight flavours and textures within chocolate that you won’t find anywhere else in Aotearoa, NZ.
