This Christmas we are taking you back to your fondest memories, In our opinion dessert is the best course, in my whānau at Christmas we would have several different types of desserts across Christmas. from trifle to lemon meringue pie and of course the famous pavlova. Each bite transports you to the dinner table this festive season. 
We created our Christmas Collection with the following bonbons:

Dad's Pavlova

The pudding of puddings. Christmas in Aotearoa just wouldn’t be Christmas without the iconic pav. Everyone’s whanau has their own unique take on this ubiquitous Christmas essential. A enduring memory of my childhood Christmases were the pav competition that played out annually between my Grandma and my Dad. I have tried to honour whanau with our take on the family pav in bon bon form. Creamy marshmallow, golden kiwifruit and strawberry cream ganache centre brought together with the all important tang of passionfruit encased in our premium chocolate. A delightful bite laden with memories designed to evoke the first bite of a Christmas pav.

Nan's Trifle 

My Nan in England always made the naughtiest trifles and one of the first deserts I mastered as a apprentice pastry chef was a classic Black Forest cake or Foret Noire. We wanted to pay homage to both my Nan and my apprenticeship with this irresistible bon bon. Boozy cherries, kirsch soaked chocolate sponge, whipped dark chocolate ganache all brought together with a kirsch white chocolate ganache.

Christmas Steam Pudding & Kānuka Custard

A combination of two classics on my dads side, burnt sugar steamed pudding but ofcourse we remastered it this year with my mums Christmas cake recipe and made a Christmas cake steam pudding encased in a Kānuka honey ganache from Te Tai Tokerau Honey. Simple yet delicious. 

Lemon Meringue Pie

For those of us who crave the bright tartness of a lemon matched with the pillowy creaminess of marshmallow meringue look no further than our Lemon Meringue bon bon. A perfectly balanced bite of creamy, lemony, marshmallow Christmas decadence.

Mont Blanc

A French classic. This bon bon evokes memories of Christmas time spent working as a pâtissier. Creamy chestnut ganache made with sweetened confit chestnuts with a hint of nutmeg and orange on a praline wafer base encased in our premium chocolate.  

Mum's Banoffee Pie 

Mum knows best. Roasted Banana Ganache with a rum pecan crumble and our famous sea salt caramel. 

Intense Pacific Chocolate Truffle 

To finish the array of nostalgia we introduce our 100% Pacific Intense Chocolate truffle. Made with our cacao from Samoa. Finished with Tahitian vanilla salt to compliment the cacao notes.
